Baked Pesto Salmon

In this dish the salmon is baked with the most delicious sun dried tomato pesto.  I recommend using Spring, Chum or Coho Salmon for this dish.  - Jen

 

Salmon (5-6oz)
2 oz Sun-dried Tomato Pesto
¼ cup Parmesan Cheese
2 Tbsp Fresh Basil (chopped)

 
  • Preheat oven to 425F
  • Place fish on a parchment lined baking sheet
  • Spread pesto over salmon, then sprinkle parmesan cheese over fish
  • Bake in the oven for 12-14 mins or until the fish is cooked and the cheese slightly browned
  • Garnish cooked salmon with chopped basil on top
