This is a great and simple recipe for home made fish and chips.  The cornstarch helps fish and batter to stick together.  You can also use this batter for vegetables and mushrooms.  - Jen

 

1 cup cornstarch sifted
1cup flour sifted
500ml sparkling water

 
  • Mix together with a whisk in a bowl.  Let mixture sit for 2 minutes. If mixture starts to separate after a few minutes, whisk again before dipping fish into mixture.
  • Dip your choice of fish into batter and fry in canola oil at 375 degrees.  Cook until crust is golden.
