1 cup cornstarch sifted
1cup flour sifted
500ml sparkling water
- Mix together with a whisk in a bowl. Let mixture sit for 2 minutes. If mixture starts to separate after a few minutes, whisk again before dipping fish into mixture.
- Dip your choice of fish into batter and fry in canola oil at 375 degrees. Cook until crust is golden.
