Cod (5-6 oz)
1 Red Pepper (sliced into julienne strips)
½ Red Onion (sliced into julienne strips)
2 Tbsp Parsley (chopped)
¼ cup Olive Oil
Salt and Pepper
- Preheat a pan, sauté onions and peppers in olive oil. (4-5 mins)
- Season well with salt and pepper. Add chopped parsley and mix well. Reserve.
- Reuse the same pan for the cod. Season cod and pan sear fish for 3-5 mins per side.
- Serve fish on plate, and cover with sautéed vegetable mix.
