Herb Crusted Snapper

Fish is so good for you, and snapper is one of my favourites. We have purposely left out salt in this recipe and instead use citrus and spices to season the fish.   This delicious snapper recipe would be easy to double or triple for a family meal. – Jen

 

2 Red Snapper Filets
4 Tbsp White Wine
¼ cup Fresh Parsley (chopped)
2 Tbsp Bread Crumbs
1 Tsp Lemon zest
1 Tbsp Lemon juice
½ Tsp Dried Oregano
½ Tsp Dried Thyme
1 Tsp Olive Oi
1 clove Garlic (minced)

 

 
  • Preheat oven to 375F and spray a ceramic oven proof dish with non-stick spray
  • Make crust mixture by combining parsley, wine, bread crumbs, lemon zest, lemon juice, oregano, thyme, olive oil and garlic. Let it stand covered until it forms a paste like consistency (about 10 mins).
  • Place snapper in baking dish.  Spread herb paste over the fish evenly and bake fish in the oven for 12-14 mins.
