Lemon Salmon Burgers with Lemon Basil Mayo

This is a great recipe for kids and also guests that like to shy away from meat. The lemon basil mayo is so easy to make, and the salmon burgers can be pre-made ahead of time before serving it at your dinner party.-Jen


Yields = 4 Burgers

1 1/2 lbs Salmon Fillet
2 Eggs
1/4 cup Parsley (chopped)
2 Tbsp Red Onion (finely chopped)
1/2 cup Breadcrumbs
2 Tbsp Lemon juice
Zest from 1 Lemon
1-2 tsp Dried Basil
1 Pinch Red Pepper Flakes
Salt and Pepper

Lemon Basil Mayonnaise:

1/4 cup Mayo
2 Tbsp Lemon juice
2 Good Pinches of Dried Basil

  • Combine these three ingredients in a small bowl. Use as a sauce for the burgers.
  • Preheat your oven to 400F. Place salmon fillet on a parchment lined baking sheet. Season with salt and pepper, and drizzle with a little olive oil. Bake the fish for 13-14 mins. Let it cool down, then flake into a large bowl. The skin should easily come off, and be discarded.
  • In the large bowl, combine the salmon, eggs, parsley, red onion, lemon juice, lemon zest, dried basil, red pepper flakes and the breadcrumb. The mixture should yield 3-4 firmly packed patties about 1/2 “ thick.
  • Heat a large skillet with vegetable oil (enough to cover the bottom of the pan) over medium heat. Add the patties and pan fry them for 4-5 mins per side. You want them nicely browned. Serve in a bun with lettuce, tomato and the Lemon Basil Mayonnaise
