Bring out the Mariachi band! This Mexican themed dish brings a little bit of heat to the table, only to be tamed by a delicious and sweet mango salsa. It’s a great summer recipe for entertaining guests. - Jen
2 lbs Cod Fillets
1 Mango (peeled, seeded and diced)
4 Roma Tomatoes (chopped)
2 Persian Cucumbers (finely chopped)
1 Lime (juiced)
1 Lemon (juiced)
1 Tbsp Pickled Jalapeno Pepper (minced)
2 tsp Dried Chili Flakes
2 Tbsp Fresh Basil
2 tsp Paprika Salt and Pepper
1/4 cup Vegetable oil
- Start by making the mango salsa. Combine the mango, tomato, cucumber, lime juice, lemon juice, jalapeno pepper, chili flakes, and basil in a bowl. Season with salt and pepper. Reserve.
- Preheat outdoor grill to high heat. Season the Cod fillets with salt, pepper and paprika. Brush the cod fillets with the vegetable oil.
- Grill the Cod fillets about 3 mins per side. Quickly warm the tortillas on the grill just as the Cod is finishing. Serve the grilled fish in the warm tortilla topped with a good helping of the mango salsa.
