Roasted Halibut with Pea and Mint Salad

This recipe is so refreshing it’s great for a hot summer day or just a simple healthy dish.  Try to opt for fresh herbs in this recipe.  Our halibut is moist and tasty, and they look especially pretty on a colorful bed of green salad.  – Jen


Fresh Halibut (5-6oz)
Juice from 1 lemon
3 Tbsp Olive Oil
1 clove of Garlic (minced)
½ tsp Salt
¼ tsp Ground Black Pepper

3 Tbsp Olive Oil
2 Shallots (minced)
1 Yellow and 1 Red Pepper (chopped into small dice)
1-2 Cups Frozen Green Peas (thawed)
½ cup Fresh Mint (chopped)
Zest From 1 lemon
1 Tbsp Fresh Thyme (chopped)
Salt and Pepper to taste


  • In a bowl mix together the lemon juice, olive oil and garlic. Pour this marinade over the piece of Halibut and marinate in the fridge for 30 mins.
  • Preheat oven to 425F
  • Remove Halibut from marinade and place on a parchment lined baking sheet. Bake the halibut for 14-16 mins.
  • Meanwhile, mix salad in a bowl. Combine peas, shallots, lemon zest, mint, olive oil, and thyme. Mix well and season with salt and pepper to taste.
  • When the fish is ready, make a nice mound of pea salad on plate and serve the halibut on top.
