This baked salmon is aromatic and delicious. You'll love this wonderful-tasting curry baked fish.You can use all variety of salmon for this recipe. – Jen
4 Wild Salmon Fillets (6 oz each)
2 Tbsp Cilantro (chopped)
2 Tbsp Lemon juice
2 tsp Curry powder
2 tsp Dijon mustard
1 tsp Sugar
1 tsp Garlic (minced)
1 tsp Ginger (finely grated)
1/4 tsp Salt
Pinch of Black Pepper and Cayenne Pepper
1/2 cup Olive oil
- Combine all vinaigrette ingredients in a small bowl except for the olive oil. Let stand for 30 mins at room temperature. Then, slowly whisk in the 1/2 cup olive oil until mixture is emulsified. Set vinaigrette aside.
- Preheat oven to 450F.
- Place Salmon fillets on a parchment lined baking tray. Season salmon fillets with salt and pepper. Brush a little olive oil over each fillet as well.
- Roast salmon in the oven for 5-6 mins a side.
- Serve salmon fillet on the plate and garnish it with the curry vinaigrette over top. Thisdish is nice to serve with Basmati rice and a simple sauteed vegetable of your choice.
