Scallops baked with Tomatoes, capers and fresh basil

A great, simple, easy to prepare scallop dish with a Mediterranean theme!   - Jen

 

serves  4
12 large qualicum scallops

1 cup chopped organic tomatoes
1 tbsp capers in brine chopped

1 tbsp chopped fresh basil
1 tbsp mayonnaise

½ cup panko bread crumbs

½ cup grated parmesan cheese

 

 
  • Preheat oven to 425F.
  • On a greased baking pan, put scallops at bottom of the pan
  • Add mayonnaise, tomatoes, capers and basil into the mix
  • Cover with panko bread crumbs and cheese.
  • Bake until everything is hot, cheese is melted and bread crumbs are golden brown.  Approx 12-17 minutes.  Serve with rice or salad.  Enjoy!
