Smoked Paprika Salmon

Salmon is one of my favorite foods but only if made well. It's very meaty so it can take a lot of season and this recipe just makes it all worth while. – Jen

Salmon x 2 (5-6oz)
1 Orange (zested and juiced)
1 tsp Dried Thyme
½ Tbsp Brown Sugar
½ Tbsp Smoked Paprika
Pinch of Cinnamon
1 Tbsp Olive oil
¼ tsp Salt
 

  •  Make the marinade first: by combining the orange juice, 1 Tbsp oil and ½ tsp dried thyme. Place salmon in a dish and pour the marinade over it. Refrigerate for 30min to 1 hr for more flavor.
  •  In a separate bowl combine the sugar, smoked paprika, cinnamon, orange zest, the other ½ tsp dried thyme and sea salt. Mix well and reserve. This mix will be the rub for the salmon.
  •  Preheat oven to 400F. Remove salmon form marinade. Discard marinade.
  •  Place salmon on a parchment lined baking sheet, and cover top with the rub mix.
  •  Bake for 12-15 mins.
