Smoked Salmon and Leek Quiche

Smoked Salmon and Leek Quiche

 This is one of my "go to" dishes for a party. It's just as good after an hour at room temp as right out of the oven. - Jen

Serves a party!

½ Side of Smoked Salmon (chopped)
1 Leek (washed well and chopped)
2 Tbsp Fresh Dill (chopped)
1 Tbsp Olive oil
2 Tbsp Butter
4 Eggs
1 cup of Cream
85g Swiss Gruyere Cheese (grated)
1 Deep Dish Pie Shell (par baked according to box directions)


  • Preheat the oven to 350F
  • Start by sautéing the leek in a little olive oil and butter over medium heat for 4-5 minutes. Season the leeks with salt and pepper. Reserve.
  • In a large bowl, whisk together the eggs and cream. Season this custard mix with salt and pepper. Then add the grated cheese, the sautéed leek, the chopped dill and the smoked salmon.
  • Pour this mixture into the pie shell. Place the filled pie shell onto a baking sheet and then place it in the oven, Bake the quiche for about 35-45 minutes. The filling should be set and the top nicely browned.
