F.I.S.H. Sustainable Seafood Supper Challenge

We threw down the gauntlet for prolific Instagrammer Leila Kwok (@leilalikes), challenging her to create a sustainable BC seafood meal incorporating Ocean Wise ingredients from Fresh Ideas Start Here. As her gorgeous photos will readily attest, she definitely rose to the occasion and then some! Leila’s own words best tell the tale of her fantastic family-style dinner.

Feels like Christmas in August! In my large styrofoam box from Fresh Ideas Start here: four fresh Ocean Wise Dungeness crabs, Salt Spring Island mussels, beautiful Organic Ocean side-striped shrimp, and last but not least my littles’ favourite candied salmon. My heart might have skipped a beat.

When presented with beautiful seafood like this, I call my clan to help and feast with us. In my lovely hand model’s hand, an Ocean Wise BC Dungeness crab trap caught at Howe Sound.

Dinner is served. On this large 21” plate, a seafood boil using only local ingredients. I’m grateful to be able to enjoy this delicious food with my dearests. Life is good when I get to share moments like this with them.

The broth was layered with Old Bay spice, chorizo, Pale Ale, onions, garlic, celery, lemon, fennel seeds, coriander seeds, new potatoes, cayenne pepper, and black peppercorns. I’ve done different variations of the broth, and my favourite is still with white wine.

This seafood boil is a perfect example showing that, when ingredients are fresh, the home cooking method doesn’t need to be complicated at all. Fresh Ideas Start Here is opening their second location in Kitsilano late this fall. I look forward to dropping by and getting my regular fix of seafood.
