Herring Done Three Ways

Our all-too-short Herring season will be over before you know it, so here are some quick-and-easy cooking tips to get them into your kitchen ASAP!

Pan Fried

4 herring fillets (approx. 1 ounce each, deboned and descaled)
Salt and pepper
2 tablespoons vegetable oil
1 tablespoon butter

  1. Put heavy-bottomed pan on medium heat with oil.
  2. Score herring fillets and season with salt and pepper.
  3. Place herring into hot pan, skin-side down for about 1.5 minutes.
  4. Flip herring and add butter. Cook for 1 minute, then remove from pan and place onto paper towel.
  5. Let cool and serve.

BBQ

  1. Heat grill to its highest setting.
  2. Rinse herring under cold water and thoroughly pat dry with paper towel.
  3. Lightly brush herring with olive oil and season with salt.
  4. Grill for 3 to 4 minutes per side or until cooked. Flesh should be firm and skin should be well browned.
  5. Remove onto paper towel, let cool, and serve.

 

Baked Whole

  1. Preheat oven to 200°C.
  2. Rinse herring with cold water and thoroughly pat dry with paper towel.
  3. Lightly brush herring with olive oil and season with salt.
  4. Wrap herring in foil.
  5. Bake for 25-30 minutes.
  6. Unwrap, let cool, and serve.
